"in a great city like madrid, you can find almost any food you can imagine, but in my opinion there has always been a big gap in the culinary scene of madrid: the barbecue. That's why I love to discover places like jimbo 's smoker, a new barbecue restaurant hidden in a chamberi square. one of the things that differentiates jimbo's from other places of barbecue madrid (which, basically, are burgers) is its authenticity. You see, the true American barbecue is composed of large pieces of meat cooked in slow fire, with layers of flavor from wood smoke and, of course, homemade barbecue sauce. in jimbo's get the classics of the barbecue: brisket (falta de ternera,) the ribs and the pig pulled, and have a good selection of classic garrison as macaroni with cheese, beans, potato salad and cabbage salad. to get the most out of your smoker, jimbo also offers smoked dishes more similar to the north cuisine of the europa than the south of the USA... smoked potatoes with mussels and sour cream or smoked sardines. on each table, there are three bottles of delicious homemade barbecue sauce (normal, spicy and extra spicy) that are perfectly in the line between sweet, salty, smoked and spicy. if not enough, they also have 10 taps of national and international craftsmen and a fridge full of international references (it is one of the only places in madrid to get the original pale snowsaw ale). We went to 17:00 when the kitchen was closed (the barbecue is served only during the lunch time and from 20.00), but gave us a couple of Spanish alley potatoes, a baked lot. the nachos were very good, but the smoked pig took them to another level. 100% recommended to remove the barbecue monkey in madrid."
