"I recently booked a table for dinner at adam handling in caxton, known as the runner in the master boss: the professionals in 2013, who has won many awards since then. we both went for the tasting menu, which consisted of six curses, which cost 70 £ per person. to begin, we were served a warm sourdough bread. I usually don't try to overdo it with the broth course at the beginning, but that chicken butter and devout parfait was just too good to waste it. the donuts with dressed crab were delicious little mouthful, even with a slightly denser texture, then I expected. I'd like to have given myself a whole plate. the Beetroot snack were small delicate disc rolls with a sweet and slightly sharp beetroot filling. it was really light and crisp and dusted in a beet root powder. the chicken skin was very attractive, and a favorite for both of us. the first cure was the salmon, with fertile, sweet and acidic washabi, apple and dill. shows a bit of molecular liquid nitrogen, as our server overlaid a pot with frozen violas and poured into the contents of our dishes. I love tartars and enjoy the lamb tars, served with beet, fermented red pepper, chili and acid. I just wish there were more. the chicken and lobster was served with a fragrant yellow curry and palm sugar sauce. the lobster was fresh with a beautiful, springy texture, and the buzz really tender. the ashed bark rump is apparently its signature dish, served with burned artichokes and cauliflower. A delicate piece of bark with a beautiful pink center, and you could really taste the strong smokey aromas in it. for dessert we served the apple with gurke and gin, which was very cool and refreshing. a beautiful way to clean the palate after the rich cures that had before. the second dessert was sweeter and edible a yuzu based dessert with milk, crumbs and meringue. the restaurant itself was fortunately not too crowded on a Friday night, and service was generally pleasant. the menu is cheap and the dishes were beautifully presented and satisfying.
