TRATTORIA con tutte le lettere maiuscole, di quelle che si vorrebbero ovunque. Pochi preliminari: antipasto misto freddo e caldo, copioso e godurioso (dall'insalata russa top al tortino di topinambur con bagna caoda grezza sopra), poi carrellone di bollito piemontese con relative salse (anche rafano e piccante, oltre a cognà e bagnet vert). Provato il brodo come finale salato, quindi dolce interessante. Caffè e via: prezzo onesto!

siamo nella casa del bollito, in un posto delizioso: una vecchia casa splendidamente conservata nel cuore storico del villaggio. gli interni, la fede in passato con vecchie credenze e boiserie, restituiscono l'atmosfera. luci discrete, personale cordiale e profumi che stimolano l'appetito. senza preamboli Ho subito preso dei ravioli superlativi in un brodo delicato, aspettando quindi sua Maestà l'ebollizione. sette pezzi come la tradizione qui non solo rispettato ma onorato, sette pezzi teneri accompagnati da diverse salse dolci, piccanti ideali per esaltare i sapori della carne.
