"I always make La Canada Restaurant a must any time I travel to Spain. Either on my way in or before I come back to the States. I visited La Canada in January, this time I had their famous Cocido Madrileno (Garbanzo beans, soup and chicken stew, they have some pictures of it in their profile)They slow cook it for ours with the chicken in the pot to get all the flavor. Definitely enough to survive the whole cold season. This past winter, although mild in temperatures, was cold enough to make me crave their Cocido. My friend had their solimillo de ternera, (beef tendeloin) medium rare. He was recommended to try it cooked that way and with the large salt grains on top, their red pepper on the sides and french fries, it was delicious. The meat was so tender you didn't have to try slicing it. It felt like butter. In addition to their food, their natural location as well as the old fashion castle look interior decoration make it the best combination. It feels very cozy and definitely makes me not want to leave the country, but as I said, always a stop for me. See you soon La Canada."

Hemos estado comiendo en el bastón durante más de 20 años, y es un placer cocinar y especialmente los callos. son los mejores de Madrid. los maravillosos chuletas de cordero y la lengua sublime. Ni siquiera te lo digo.

una deliciosa sopa que recomiendo, y las tapas todo un sabor. el lugar increíble, y la atención no se dice. y cerrar el entretenimiento, el baile flamenco, una nueva experiencia para mí. Si vas a Madrid, no olvides visitar el bastón.

This place should not be ranked at it is right now in TripAdvisor. It’s and old fashioned place we’re the traditional Madrilenian cocido is served by waiters who do not treat the client well. These guys serve the food careless, always in a rush and just thinking about finishing their day as soon as possible. The cocido is just lees than ok, too fat and the noodles are served cold and overcooked. The feeling in general with the food and the personnel is just not nice (with some limited exceptions).

I went to La Cañada with a group of friends yesterday and we had such a great time. The service was incredible. Our waiter remembered everyone's order without writing anything down, and he was very helpful at answering any questions or giving recommendations. Very attentive and timely as well. The food was on another level. The croquetas are the best I've had in Spain, the steak (solomillo) with fries and blue cheese sauce was enough to make me want to return, and the deserts we shared included French toast with ice cream, cheesecake, carrot cake, and more. "The menu is short by the area standards and includes a number of starters, fish and meat entrees. There was no “menú del día” and the waiter didn’t offer anything in particular, so we ordered a tomato and tuna salad (ensalada de tomate con ventresca) as starter to share. A small, non-descript potato salad tapa (ensaladilla rusa), courtesy of the house, arrived immediately. The tomato salad was different, though. I’m no fan of kumato, but this salad was excellent. Likely the best I’ve had in ages. Not sure what the secret sauce is here but contributing factors surely include thin belly flakes (rather than the solid blocks preferred by cooks showing off their product rather than their skills), superb olive oil and, most notably, a healthy dose of tomato pulp to ensure not a single ventresca bite feels dry. My main entrée was “cahopo”, a sort of cordon bleu from Asturias, which I had ordered out of curiosity and impulse. It looked singularly out of place given there wasn’t any other obviously Asturian choice on the menu and Alilian felt a little stiff-necked for a dish that is typically judged by weight rather than quality. Its presentation kind of proved the cook felt the need to dress the humble cachopo in some haughtier fashion: fine-grain breading, French potatoes as a side dish stuffed in a tin can, an oversized plate with a smear of reddish sauce all around its meter-long circumference. Despite the looks, the cachopo proved a great choice; tender and juicy, flushed with strong, oozy cheese, intense and yet not overloaded with oily bread. The over-indulgence notwithstanding, I accepted sharing a cheesecake for dessert. The waiter warned us the cheese was particularly strong and he was right. I love strong cheeses, but somehow the mature, moldy flavors of whatever cheese it was they used to bake this particular cake overpowered the sweetness and fruitiness I´ve come to expect from a cheesecake. In any case and overall, a very pleasant experience. And yet, in retrospect I got the feeling the place still lacks identity, something to be famous for, a reason to go back. It turns out the restaurant is affiliated with a Ribera del Duero winery. So maybe that distinction is in the wines, and dishes are selected based on how they pair with specific types or vintages. Too bad if that is the case, for I do not drink wine."
