"This restaurant next to the city hall in the old town is one of the many “fondue” places, the national dish by excellence… and everybody has their own best place. The spirit of the “fondue” is sharing and having fun with family or friends. With the internationalization, these fondue places also offer a “Chinese” version, besides the traditional cheese or the French “Bourguignon” with meat. The cheese fondue is usually a mix of Vacherin and Gruyere, dry white wine and a drop of kirsh poured into a cast iron pan scrubbed with garlic. With the cheese, potatoes and bread, it’s definitively a heavy meal and I recommend ordering a fresh salad on the side. The best part of the fondue is called locally “la religieuse” (unknown origin), when a thin crispy crust of cheese remains on the bottom of the cast iron pan. I ordered a tasty cheese fondue with morels together with a small plate of local cold cuts, a salad and a pitcher of white Fendant wine. A nice sorbet and a glass of pear alcohol were welcome to help the digestion. Traditional pine wooden décor and friendly service, what counts is the atmosphere."
