"On the suggestion of good friends we were eating with these at the “La Caletta” in Calw yesterday. Nice little restaurant in rustic style located directly on the market square in the old town. At a glance, already in advance in the online menu, I immediately saw “Spaghetti from the Parmesanlaib”. One or another eaten in various places, this actually quite simple dish is always a great pleasure for the lover of Italian cuisine. In addition, there is always something the event as these noodles are prepared at the table. Depending on the season, selectable with truffles. Unfortunately, it was not a season and so it was just the variant without this gem. In advance there was a Bruscetta with Gorgonzola, candied walnuts and pear. Gorgonzola and pear is really a unique symbiosis and only recommended. So the appetizer was a real pale man's mouse. Two stars. Now it was with great expectation of the spaghetti. Probably the expectations were too big. The Parmesanlaib was rolled up. There were spaghetti in a bowl and in a glass carafe noodle water. Somehow, however, both have been standing around for too long somewhere and then still in front of our eyes and thus before preparing. In any case, the noodle water could no longer dissolve the previously dissolved cheese chips. The noodles were obviously no longer able to do so. These had probably also been quenched before, because otherwise, at least in the approach, they would have accepted something from the sauce and had to have been somewhat more sticky after that time. In any case, the expectant did not come out of the cheese loaf. The noodles have hardly accepted sauce. Were spaghetti in noodle water with cheese flavour. The slightly melted cheese remained in the laib and was then laid with the spaghetti on top. No green only with some pepper on the edge of the plate this something was served. Once a short time the spaghetti tries to turn, then everything has passed through the plate. The spaghetti were unable to accept the sauce. A plate in which in an aqueous broth approx. 80% of the cheese. It was lumpy, which never reminds me of a parmesan from taste and consistency. An original Parmigiano Reggiano or an original Grana Padano would not taste like that or show up like that. The cheese was clearly milky and remembered by the consistency and taste rather of a mozzarella, but there is not as a cheese loaf. Therefore, I cannot really say what has been done for a cheese, but it has not remembered a parmesan. Therefore, I cannot recommend this court in the “La Caletta” even though I still have the water in my mouth on my previous experience. The other dishes that were served at our table were largely approved, although some action then raises one question or another. Therefore, it ultimately remains at 2 well-intentioned stars."
