We have been visiting this restaurant for many years on our annual trip to Trieste. It may not be suitable for chic society, but the owners are very friendly and the boss is an excellent cook of the few dishes on offer. Italy as it once was.

Bar Franza, we ate excellent fish and a delicious walnut d'être. The owners are fantastic and make you feel at ease straight away. To finish, an excellent absinthe bitter, truly bitter finally. I go in and order a raw sandwich and a rodoleto and a drink. I turn around and the lady weighs the ham with an electronic scale, checking the grams scrupulously. I wanted to ask you, lady, are you selling ham or gold? I advise the lady to take a tour of the buffets in Trieste and see how hand-cut raw ham sandwiches and rhodoleti are made.
