Rather than providing a set menu, they allow you to make up your plate with different options from a wide variety of dishes provided from a display counter. You can make your plate up completely yourself, with whatever you want, or chose to tailor a plate from example options. The food, and vegan options, are more varied than in other places, you really have a great selection of really thoughtful food.
