WHAT IF you could have eaten at the young wild cooking genius+...of ALCHIMIA FOODLAB and you just did not?? no BS: These guys really know how to cook, but frankly, this is nothing special in Rome. What makes these guys special: they have more+ than professional perfection they are fresh, modern, innovative, and new. And they like to keep it simple. And that is the most amazing part of it. This is their magic. In perfect Italian tradition, they only use a couple of ingredients, but combine them in a genius way. eg Gambas w/ Pistachio, Octopus w/ Melanaza-Mushroom sauce. This is art you can eat, and you must not miss. If you really want to criticize something at ALCHIMIA FOODLAB, then this: #1 they don’t know how good they are. so they are a bargain. affordable, and you still get a table without reservation (but this will change soon). #2 they could be more courageous. damn, you guys are fabulous, don’t hold back, do even more of it! For the record: ALCHIMIA FOODLAB is a tiny spot a little outside the city center, with a neat and straight atmosphere. They focus on modern cuisine in perfect Italian tradition, but are leaving behind all conservative fanatic rules. Just Great. Here you can experience NOW the modern ROME CUISINE of tomorrow."

Ottimo cibo di qualità, ho apprezzato per esempio l'olio usato per il condimento e poi ho saputo che è fatto proprio da loro. Il locale é elegante e il clima rilassante.

Cominciano con i complimenti allo chef!Abbiamo assaggiato: antipasto, primo, dolce quindi non posso dire nulla sui secondi. Passando al dettaglio... antipasto: uovo pochette a livelli top e tartare di manzo anche molto buona. Primo: tagliolini ragù bianco veramente saporiti. Piccolo appunto di dolci con il tiramisù un po' troppo bagnato ma con una spuma di prim'ordine. Torneremo.

for the first post-covid dinner, decided to try an inconceivable little neighborhood spot that had provided Christmas dinner with delivery, and were not disappointed. even a simple tagliolini con tonno e pomodoro, and fusili alla vignarolla, were delicate, fresh, tasteful and imbued with simple. elegance, as the best of Italian fare. the service was perfect, neither pushy nor letiaisz faire. the road is quiet, on the way in the sunset wss quite pleasant.
