But offering a tasting menu without the possibility of accompanying it with a pairing option seems like “coitus interruptus” to me, and even more so with the level of cuisine and service exhibited. It is a shot in the foot, because not only are they giving up up to 30% extra billing but they are preventing the customer from having a full culinary experience. The wine list seems appropriate for the establishment (although it can always be improved) so it is even less understandable that they have not adapted its pairing to the menu. So I am forced to give these 4 stars not as a punishment, but as a wake-up call, because an iron law of gastronomy is being ignored: Not everyone who likes to eat well likes wine, but everyone does. He who likes wine also likes to eat well. Honestly, I think it is the leap forward that the place deserves in terms of quality and service.
