"A great example of how the kitchens of the different valleys have a new take on classic Piemontese dishes. Chiara and Simone were wonderful hosts. Simone offered us some delicious prosecco and affettati formaggio while we waited for friends. The atmosphere was rustic AND refined, a wonderful renovation of an arched space. The Vitello tonnato gave my Italian mother-in-law a run for her money, and the Ravioles* della Val Varaita is a bold move in an area that prides itself on its raviole. Could have used more butter: There's only one road through the valley, so you can't miss it."
